The Tarassaco (Taraxacum officinalis) is a herb with a bitter taste, harvested in spring on the whole Plateau; it is usually called the “salad of fields” and is used for cooking. The species of dandelion growing in Conco is particularly good; its taste is delicate, almost sweet, which makes it an important part of many delicacies, even cakes and biscuits. In May many restaurants organize fairs, dedicated to specialities with dandelion.
